His travels through Asia deepened his knowledge and broadened his approach to flavour, leading him to Australia, where he honed his craft in Melbourne’s vibrant food scene. Eventually, he made his way to Canada, helping open West Oak in Yaletown and taking over as Executive Chef just months later. Today, Adam is a partner and Executive Chef at The Watson and Bartholomew, where he continues to evolve his craft and shape Vancouver’s dining landscape.
