Chef Tushar Tondvalkar is the Culinary Director of The Indian Pantry. Born in Mumbai and influenced by summers in coastal Malvan, he brings a deep connection to regional Indian flavours into everything he creates.
His career includes time in Michelin-starred kitchens like Gaggan and Gaa in Bangkok, along with roles at top Vancouver restaurants such as Blue Water Café, Bauhaus, and The Fish House in Stanley Park. As the former Executive Chef of Mumbai Local, he became known for bold, ingredient-driven cooking. In 2019, he founded The Indian Pantry to share the richness of Indian cuisine through tasting menus, private dining, and a growing line of sauces and spices.
Driven to reimagine how Indian cuisine is viewed in the West, Tushar creates dishes rooted in tradition but presented with a modern, approachable style. His bold, ingredient-forward cooking has earned acclaim across BC, and his creativity was nationally recognized when he won Chefs vs. Wild on Hulu/Disney+.
