His career includes time in Michelin-starred kitchens like Gaggan and Gaa in Bangkok, along with roles at top Vancouver restaurants such as Blue Water Café, Bauhaus, and The Fish House in Stanley Park. As the former Executive Chef of Mumbai Local, he became known for bold, ingredient-driven cooking. In 2019, he founded The Indian Pantry to share the richness of Indian cuisine through tasting menus, private dining, and a growing line of sauces and spices.
Driven to reimagine how Indian cuisine is viewed in the West, Tushar creates dishes rooted in tradition but presented with a modern, approachable style.
